Interpretation Introduction
Interpretation: The effect of reducing the pH on protein (containing histidine in its active site) needs to be explained.
Concept introduction: Protein denaturation (i.e. disruption of the native primary structure of the protein) occurs when the optimum pH is not maintained. As enzymes are proteinaceous, they are not able to function effectively at high or low pH due to positively or negatively charged groups present on the amino acids at the active site.
