White meat or dark? It seems almost everyone has a preference. Dark leg meat has a richer flavor and more fat that makes it moister but some people prefer the milder, leaner white meat of the breast. The difference bet wren dark and white meat are due to their predominant type of muscle fiber. Wild chickens and turkeys are ground-dwelling and usually fly only to escape a fox or coyote or to reach a safe perch for the night. You can probably predict that their breast meat is packed with fast-twitch muscle fibers—good for a brief frantic flutter (as well as our eating pleasure). Given the opportunity, these birds will spend much of the day walking about hunting for food, and their leg muscles are adapted for this prolonged, low-intensity effort with primarily slow-twitch fibers. Blood-carrying capillaries surrounding slow-twitch fibers and oxygen-storing myoglobin within them preside more iron, a darker color, and more intense flavor to the legs of these birds. But what about migratory ducks and geese that fly long distances? As you might predict, their breast muscles consist of dark meat.

- Many distance runners “carb load” the day before a big race. How does this eating strategy provide an advantage to the runner? The carbohydrates cause the release of insulin. The excess carbohydrates are converted to fats, which have a higher calorie density. The glucose from the carbohydrates lets the muscles make excess ATP overnight The excess carbohydrates can be stored in the muscles as glycogen.arrow_forwardAthletes often use whey products to prepare for competition because whey proteins: Group of answer choices are mild stimulants that produce alertness and reduce reaction time provide all the essential amino acids needed to build new muscle tissue elevate testosterone and estrogen in the blood of male and female athletes, respectively produce rapid weight loss by burning excess body fat and sparing glycogen produce free radicals that promote many of the body's beneficial responses to exercisearrow_forwardDietary fiber comes from plant carbohydrates, like cellulose, that are undigestible.Dietary fiber is good for you because it helps maintain bowel health. Greater then the urine then blood True or false? the function of the segmentation is to propel food along the digestive tubearrow_forwardWhen you jog, most of the food energy you burn above your basal metabolic rate (BMR) ends up as internal energy that would raise your body temperature if it were not eliminated. The evaporation of perspiration is the primary mechanism for eliminating this energy. Determine the amount of water you lose to evaporation when running for 32 minutes at a rate that uses 400 kcal/h above your BMR. (That amount is often considered to be the "maximum fat-burning" energy output. The latent heat of vaporization of water at room temperature is 2.5 106 J/kg.)The metabolism of 1 gram of fat generates approximately 8.65 kcal of energy and produces approximately 1 gram of water. (The hydrogen atoms in the fat molecule are transferred to oxygen to form water.) What fraction of your need for water will be provided by fat metabolism?arrow_forwardYou are what you eat. What does this mean? If you eat only celery, will you become a vegetable? Sometimes there are so many words used to describe foods and nutrition, it is difficult to make sense of them. In fact, we do use the food we eat to provide energy and also the building blocks for growth and development. Even after you are fully-grown, your body, just like any other machine, needs to make constant repairs to injured areas and must replace cells that have died. To make sure that the structure of your body is correct and strong, you must provide it with a regular supply of the right building materials. Foods are the building materials for the body. There are six large categories of nutrients in food. These are carbohydrates, protein, fats, vitamins, minerals, and water. Each food you eat not only contains more than one nutrient, but also a different number of calories (energy). Fat, protein, and carbohydrates provide calories, or energy as well as building blocks. Vitamins,…arrow_forward
- Which of the following is not true for dietary fiber? dietary fiber is nondigestible carbohydrates and lignin that are intrinsic and intact in plants dietary fiber is not digested by our body’s enzymes in the large intestine consuming a diet high in insoluble fiber can help lower blood cholesterol levels including soluble fiber in a meal helps prevent sharp sugar spikes, making for a more gradual rise in blood glucosearrow_forwardA man is found after being lost in a foodless desert for a week. - hGH is an important part of fat metabolism, muscle development, and bone growth. Synthetic hGH can be used to treat children and adults suffering from hGH deficiency. More recently, competitive athletes have began taking hGH in an attempt to improve athletic performance. The use of hGH for athletics is banned by many major sporting organizations. A recent study of 44 athletes who took daily injections of hGH over 20 days showed that, on average, the athletes gained 4.2 lbs of muscle, but the gain in muscle did not translate to increased athletic performance.Evaluate each statement regarding the use of hGH by competitive athletes to determine whether the statement is an example of an ethical, economical, societal, or environmental issue. Athletes who play professional sports should be encouraged to take synthetic hormones to improve performance because their job is to win. Athletes who took hGH did not improve their sport performance but did improve their appearance and marketability.…arrow_forwardWhich of the following types of animals has the highest efficiency in being able to absorb saturated fatty acids across the intestinal epithelia?
