Introduction:
Fatty acid is carboxylic acid with a long aliphatic chain, which is either saturated or unsaturated. Olive oil and soybean both are fatty acids. Unsaturated fatty acid is of two types’ monounsaturated fatty acid and polyunsaturated fatty acid, monounsaturated fatty acids contain at least one double bond within the fatty acid chain, and polyunsaturated fatty acids contain more than one double bond. Saturated fatty acids have single bond within the chain.
