Crushed sugar crystals when added to water have a much larger surface area in contact with water than the intact sugar crystals.
Explanation of Solution
When sugar crystals (solute) are dissolved in water (solvent) it results in a homogenous mixture. This mixture is formed because sugar crystal contains millions of sucrose molecules and when these crystals are dissolved in water all the sucrose molecules present in it dissociate and spread throughout the solvent forming strong hydrogen bonds with water molecules.
If the crystals are crushed into powder, it will increase the surface area of sugar in contact with water and hence makes it dissolve faster than crystals with less surface area.
