Introduction:

Fungi are responsible for the breakdown of organic matter like cellulose and lignin found in plants. Fermentation refers to “partial oxidation” of sugars by yeast using the organic molecule to release energy and ethyl alcohol along with carbon dioxide is released as by-products. In food microbiology, fermentation is used to prepare many commercial products like beer, wine, and bread. Some pathogenic fungi are known to cause diseases in plants and animals and humans.
