Mutarotation is the phenomenon by which the two forms of glucopyranose: α-glucopyranose and β-glucopyranose remain in equilibrium when dissolved in water. The α-glucopyranose gets converted into β-glucopyranose with time by acid-base catalyzed mutarotation of glucopyranose and vice a versa.
