Introduction:
Lipids are hydrophobic in nature, so the digestion and absorption of lipid are a complicated process when compared to protein and carbohydrate digestion. Lingual lipase in the mouth is secreted by intrinsic salivary glands and it is digests small quantity of fat; this enzyme is more active in the stomach because of the acidic pH. Emulsification droplets, micelles, and chylomicron are involved in lipid digestion.
