Concept introduction:
Canning of food is used for preserving food. The food items are heated and then cooled for destroying the species of bacteria which can cause infection in humans after the consumption of food items. Food items get spoiled if food is kept at room temperature for more than four hours. There are thermophilic bacteria which grow at high temperatures whereas mesophilic bacteria like Bacillus and Clostridium get killed after heating the food items.
