The organism Saccharomyces cerevisiae produces ethanol by utilizing glucose moleculesirrespective of the presence or absence of oxygen. The enzyme, alcohol dehydrogenase (ADH) catalyzes this reaction. Km is the equilibrium constant, which signifies the affinity of an enzyme for its substrate. The value of Km of a particular enzyme may change according to the substrate.
